Red Bean, Lentil and Split Pea casserole

Red Bean, Lentil and Split Pea casserole cooked in the solar oven today. I had some of it for lunch but it was more like al dente. Now for dinner everything is very tender and delicious! On the left is brown rice and quinoa. Solar Cooking Weekend

Red bean and lentil chilli Lately Sacramento has been a great place to use a solar oven. This weekend did not disappoint with the hot weather. Typically I cook a roast, tri-tip or chicken breasts in the oven. But this weekend I decided to try something new. Presenting my version of red bean and lentil chilli casserole.
